* 650 g Basmati Rice or Sela Rice,boiled * 2 cups Sugar * 2 pcs Qalakand(khoya/barfi) * 1 cup Cham Cham * 100 g Badam,blanched(almonds) * 100 g Raisins (Kishmish) * 4-5 Laung Cloves * 4 tbsp Milk * 1-2 drops Kewra Essence * 4 Green Cardamoms(Elaichis),crushed * 1 tsp Yellow Food Colour * 1 tsp Red Food Colour * 1 tsp Green Food Colour * 125 ml Oil

1. In a wok heat oil. 2. Once hot add in the crushed green cardomoms and laung cloves. 3. Mix well. Fry for 2-3 mins. 4. Now add in the sugar. 5. Mix well. Allow sugar to melt completely will stirring so that no granules remain. 6. Now cover and cook for 3-4 mins. 7. Uncover and add in 2 tbsp milk and a little bit of water(1/4 cup) if the sugar granules exist. 8. Mix well .cook for 2-3 mins. 9. Now add in the almonds and raisins. 10. Mix well fry for 2-3 mins. 11. Now cover and cook for 5 mins. 12. Uncover and now add in the rice. 13. Mix well.Cook for 2 mins. 14. Now cover and cook for 4-5 mins on damm. 15. Uncover now add the kewra essence by dissolving it in any food colour. 16. Spread essence over the rice. 17. Similarly spread the food colours as shown in the video. 18. Now sprinkle the qalakand or khoya on top of the rice. 19. Next add in the cham chams on top. 20. Cover and cook on low flame until the rice are dammed or smoke rises from the sides of the pot. 21. Uncover and mix slightly so that the colours combine. 22. Delicious Shahi Zarda (Mutanjan Rice) is ready to serve!
