For the Chicken Biryani masala:
* 1 kg Chicken,boti cut * 1 kg Basmati Rice * 100 g Dried Plums * 250 g Tomatoes,chopped * 1 cup Yogurt(Dahi) * Juice of 2 lemons * 1 tbsp Coriander Powder * 500 g Brown Onions * Salt as per taste * 1 tbsp Red Chilli Powder * 1.5 tbsp Hyderabadi Biryani Masala Powder(Link to recipe : https://everydaymasalacooking.com/lunch-recipes/hyderabadi-biryani-masala-powder-recipe-biryani-masala-banane-ka-tariqa/) * 1 tsp Haldi Powder * 8-10 Green Chillis * 3 Potatoes,chopped * 2 tbsp Ginger Garlic Paste * 1 cup Fresh Coriander Leaves+ Mint Leaves * 2-3 drops of Kewra Essence * 1.5 tsp Yellow Food Color(liquid) * 1.5 tsp Garam Masala,sabut * Oil as desired
For the rice:
* 3.5 cups Water * 3 Bayleafs * 8-10 Laung Cloves * 8-10 Black Pepper Corns * 1.5 tsp Star Anise,Cinnamon Sticks,Safaid Zeera * 3 tbsp Salt

1. In a bowl marinate the chicken in yogurt with (dried plums,tomatoes,lemon juice,coriander powder, 1/2 of the 500g of brown onions,salt,red chilli powder,hyderabadi biryani masala,haldi powder,green chillis,ginger garlic paste and 1/4 cup of coriander and mint leaves.) 2. Leave it for marination for around 15-20 mins. 3. Meanwhile boil the rice in the above mentioned ingredients for the rice for 10-15 mins until rice are boiled to one kanni. 4. Once boiled,strain the rice and keep aside. 5. After 15-20 mins.Heat oil in a wok. 6. Once hot add the sabut garam masala. 7. Fry for 3-4 mins.Now add the potatoes. 8. Fry the potatoes for 8-10 mins. 9. Now add the marinated chicken mixture. 10. Mix well make sure that potatoes don't break. 11. Allow to cook on medium flame for 7-8 mins until water start rising. 12. Now cover and cook the chicken mixture for 10-15 mins on medium heat until chicken is tender. 13. Once chicken is soft and tender and oil from the hyderabadi biryani masala mixture has risen on top.Turn off the heat. 14. In a small bowl mix the kewra essence and yellow food color together. 15. In a deep pot.First place a layer of boiled rice. 16. Next add the cooked hyderabadi chicken biryani masala mixture in a layer. 17. Top with a little of the brown onions,mint and coriander leaves and yellow food color mixture. 18. Repeat the layering process. 19. On the final most layer add the remaining fried brown onions, kewra essence+ food colour mixture and fresh coriander and mint leaves. 20. Cover the pot and allow the biryani to damm for 10 mins. 21. Once smoke rises from the pot turn off flame. 22. Delicious Hyderabadi Chicken Biryani is ready to serve! 23. Serve with raita and kachumar salad!
