Bihari Keema Recipe (Dum ka Qeema Recipe )-Bakra Eid Special Recipe-Eid ul Azha Special Recipe
Dum ka Qeema(Bihari Qeema) is the perfect recipe for Eid-ul-Azha.Juicy minced meat marinated in chilli oil,fried onions,spicy khara masala having the aroma of BBQ to finish it off. Delish!
* 500g mince meat(beef/chicken) * 3 medium onions, finely chopped * 1.5 cups yogurt * 1 tsp salt * 1/2 cup oil * 1.5 tbsp ginger garlic paste * 2 green cardamoms * 10 whole red chillis,dried * 1/2 tsp black pepper corns * 6 cloves * 1 tsp white cumin * 1 small piece of charcoal
* 1/4 cup mint leaves * 1 small onion,chopped * 2 green chillis, chopped * 1 cucumber,sliced

* Place the mince in a dry cloth.Fold the sides to form a ball.Rub and squeeze to remove excess water from the mince. * Allow it to sit for 10 minutes. * Remove the dried mince in a clean plate * Next in a bowl beat the yogurt, salt, and ginger garlic paste. * Add the dried mince.Mix well. * In a pan over medium heat add in the oil.Once hot add the onions.Fry until golden brown. * Once brown remove from heat, scoop out the onions in a plate straining off excess oil.Wipe off oil using a paper towel. * Place the onions in the freezer for 20 mins to crispen up. * Next add all the dry spices to the same oil in which onions were fried.Add whole red chillis, cumin,cloves, pepper corns and green cardamoms. * Fry on medium heat until brown. * Remove from heat,strain off the excess oil.Scoop out the fried sabut masala in a small bowl. * Allow to cool for 5-10 mins. * Now strain out the hot oil in which the masala was fried in a small bowl.Pour this oil in the mince mixture.Mix well. * Next take a cellophane bag add the fried sabut masala in it. Seal from one end.Crush the masala on a wooden board using a mallet. * Once done add the crushed masala to the mince mixture.Mix well. * Now take out the onions from the freezer place them in a cellophane bag and crush them. * Add the crushed onions to the mince mixture.Mix well. * Marinate for 1 hour. * Once marinated add the mince meat mixture to a pan over medium heat. * Cover and cook for 40-45 mins until the mince is tender,well cooked and water has evaporated. * Now heat the charcoal on the stove until red hot. * Place the piece of charcoal in a small steel plate or bowl. * Pour 1/2 tsp of oil to make it smoky. * Place the bowl in the pot with the cooked mince(qeema). * Cover the pot for around 5 mins so that the qeema has a strong BBQ aroma to it. * Once done dish out the minced meat in a plate. * Garnish with mint leaves, onions, cucumbers and green chillis. * Serve with hot parathas and mint chutney.
