Ingredients: 600g Chicken,karahi cut 1⁄2 cup Oil 600g Tomatoes,chopped 1 onion,finely chopped 4 green chillis,thinly sliced 1.5 tsp Red Chilli Powder 2 tbsp Lemon Juice 1 tsp Red Chilli Flakes Salt as per taste. 1,4 inch Ginger,finely chopped 1⁄2 cup Fresh Coriander
For Roasting 1 tbsp Coriander Seeds 1 tbsp Black Pepper Corns 1 tbsp White Cumin(Safaid Zeera) 8-10 Garlic Cloves,minced

1. Soak the green chillies in lemon juice. 2. Heat oil in Karahi once hot add the onions. 3. Fry for 3 mins until translucent. 4. Now add the minced garlic. 5. Mix well and fry for 2 mins. 6. Next add in red chilli owder,red chilli flakes and salt. 7. Fry mixture for 5 mins. 8. Now add in the chicken pieces. 9. Mix well and cook for 5 mins. 10. Now _**cover and cook**_ for another 4 mins until chicken pieces are fried well and golden brown. 11. Now uncover and add in the tomatoes .Mix well.Cook for another 5 mins. 12. Now _**cover and cook**_ for another 10 mins until tomatoes are softened. 13. Meanwhile in another pan roast the coriander seeds,white cumin and black peppercorns. 14. Roast until lightly brown and crisp. 15. Allow them to cool .Now grind them using a wooden mallet until fine.Roasted masala is ready. 16. Once tomatoes are softened add in 2 cups of water(if using free range chicken) and around 1 or 1/2 cup( if using broiler chicken). 17. Cover and cook until chicken is tender and well cooked. 18. Uncover ,allow water to evaporate add in the roasted masala.Mix well. 19. Next add in the green chillies soaked in lemon juice Mix well. 20. Cook for another 5 mins. 21. Now add in the fresh coriander and ginger. 22. Mix well.Cook for another 2-3 mins until oil starts to form on surface of gravy. 23. Chicken Karahi is ready to eat.Serve with hot Naans!
