Ingredients:

  * 750 g Boiled Rice
  * 4 garlic cloves,minced
  * 250 g Capsicum,thinly sliced
  * 2 eggs,beaten
  * 250 g Spring Onion Greens
  * 100 g Carrots,thinly sliced
  * 1 tbsp Black Pepper Powder
  * 1 tbsp Red Chilli Sauce
  * 1 tbsp Soya Sauce
  * 1 tsp Yellow Food Color
  * 1 tsp Salt or as per taste
  * 1 tbsp White Vinegar
  * 100 ml Oil.

Method:

  1. In a wok heat the oil.
  2. Once hot add in the minced garlic saute for 1- 2 minutes.
  3. Next add in the carrots and capsicum.
  4. Fry for 5 mins.
  5. Now add in the soya sauce, white vinegar,salt, black pepper and chilli sauce.
  6. Saute for 2 mins.
  7. Remove wok from heat.
  8. In another frying pan heat 1 tbsp oil.
  9. To the beaten eggs add the yellow food colour.Mix well.
  10. Pour egg mixture in the frying pan.
  11. Fry until egg is well cooked.Keep strirring so that egg breaks into small chunks.
  12. Now place wok with vegetables mixture on heat.
  13. Once hot add in the boiled rice.
  14. Mix well.
  15. Now add in the spring onion greens.
  16. Mix well.
  17. Next add in the fried egg chunks.
  18. Mix well make sure rice don't break.
  19. Now cover and cook for another 3-4 mins on medium heat.until smoke rises from the top.
  20. Egg fried rice are cooked and ready to devour!
