Ingredients:

Gol Gappay:

  * 1 cup Sooji
  * 1 cup Maida
  * 2 tbsp Oil
  * 1/2 tsp Baking Soda
  * 1/2 tsp Salt
  * Water as desired

Other Ingredients

  * 2-3 Potatoes, boiled and diced
  * 2 cups Boiled Cholay(chick peas)
  * 1/2 cup Sev
  * 2 tbsp Chaat Masala

Khajoor ki Chutney:

  * 1/2 cup Sugar
  * 7-8 Dates(Khajoor), seeds removed
  * Imlee(Tamarind), 3 tbsp
  * Zeera Powder ,1 tsp
  * Salt, 1/2 tsp
  * Red Chilli Powder, 1/4 tsp
  * 200 ml Filtered Water

Imlee Ki Chutney:

  * 1/2 cup Imlee(Tamarind)
  * 1/2 tbsp Chaat Masala
  * 1/2 tsp Salt
  * 1/2 tbsp Red Chilli Flakes
  * 1/2 tbsp Red Chilli Powder
  * 1/2 tbsp Zeera Powder
  * 200 ml Filtered Water.

Podinay ki Chutney:

  * 1 cup Podina (Mint Leaves)
  * 1 Green Chilli,chopped
  * 1 cup Fresh Coriander Leaves
  * 2 tbsp Imlee(Tamarind)
  * 2 small Garlic Cloves
  * 1/2 tbsp Zeera Powder
  * 1/2 tbsp Salt
  * 50 ml Filtered Water

Dahi Phulki:

  * 500 g Dahi(Yogurt)
  * 1/2 cup  Sugar
  * 1 cup Phulki

Method:

Gol Gappay:

  1. In a tasla mix all the dry ingredients, add in oil and slowly add in  water.
  2. Combine  to form a slightly hard dough as shown in video.
  3. Cover and allow it to settle  for 30-35 mins.

Khajoor ki Chutney:

  1. In a saucepan add all the ingredients over medium heat.
  2. Allow to cook for 5-10 mins until bubbling.
  3. Once bubbling turn off heat and allow to cool.
  4. Remove seeds once cool.
  5. Take out in bowl.

Imlee ki Chutney:

  1. In a saucepan add all the ingredients over medium heat.
  2. Allow to cook for 5-10 mins until bubbling.
  3. Once bubbling turn off heat and allow to cool.
  4. Remove seeds once cool.
  5. Take out in bowl.

Podinay ki Chutney:

  1. Add water to the tamarind.
  2. Press and squeeze to remove Imlee(tamarind) pulp.
  3. Pour remaining ingredients in a blender.
  4. Add in tamarind pulp make sure seeds are removed.
  5. Blend until smooth.

Preparing the Golgappay:

  1. Roll out the gol gappay ka dough in the form of a thin tortilla.
  2. Using a medium sized bowl.
  3. Trace out a large gol gappa.
  4. Heat oil in a deep kadai.
  5. Turn flame on high.
  6. Once hot add in the gol gappa.
  7. Keep covering it with oil while frying.
  8. Fry until both sides are golden brown and gol gappa has risen.
  9. Remove from wok.
  10. Allow it to cool and become crisp.

Gol Gappa Assembly:

  1. Make a whole in the gol gappa as per video.
  2. Fill it with boiled potatoes,boiled cholay,dahi phulki.
  3. Top it with khajoor ki chutney,imlee ki chutney.
  4. Finish it off with podina ki chutney.
  5. Garnish with sev and chaat masala.
  6. Dig in! And Devour!
